In the heart of Galicia, where tradition meets innovation, Destilerías Ovalle is reshaping the global whisky market. Under the leadership of Ainara Pesqueira and Juan Rodríguez Marqués, this historic family distillery, with roots dating back to the 18th century, is blending heritage with modernity to produce premium whiskies that are gaining international recognition.

Galicia: the new home of premium whisky

Galicia, with its moist and temperate climate, offers ideal conditions for aging exceptional whiskies. Destilerías Ovalle has harnessed this natural advantage, merging it with innovative distillation techniques. Using oak and Galician chestnut barrels, previously used in prestigious Spanish wineries, they’re crafting whiskies with unique complexity and depth. The distillery’s image is inspired by the “Carballo del Camino de Santiago,” a majestic 250-year-old oak tree, symbolizing the rich history and resilience of Galicia.

Innovation and sustainability: a commitment

Destilerías Ovalle’s production process is rooted in sustainability. From recycled glass bottles to eco-friendly labels, every aspect is designed to minimize environmental impact. This approach not only appeals to eco-conscious consumers but also underscores the distillery’s dedication to preserving the environment while producing luxury products. At a recent event in Sanxenxo, attendees experienced firsthand how sustainability is seamlessly integrated into the production of innovative and traditional whiskies.

Women and millennials: redefining the whisky market

The whisky market is evolving, driven by an increasing number of women and millennials seeking new, sophisticated experiences. Ainara Pesqueira, Project Manager of Destilerías Ovalle, exemplifies how women are redefining the industry. Today, women account for 40% of global whisky consumers, and Pesqueira’s innovative approach to flavor profiles and mixology is capturing this growing market segment. Destilerías Ovalle is successfully connecting Galicia’s traditions with a global audience, appealing to both seasoned connoisseurs and new enthusiasts alike.

A project with a galician soul

At the Sanxenxo event, Destilerías Ovalle unveiled the “Evolution Cask Collection,” a series of limited editions featuring the first spanish single malt whisky aged in barrels from Bodegas Pazo de Señoráns. Personalized by galician artist Rafa Prieto, these bottles celebrate the artistry and culture of Galicia. The collection includes three distinct expressions: Ovalle Gold, aged in Spanish white wine barrels; Ovalle Ruby, in red wine barrels; and Ovalle Private, featuring barrels selected by expert winemakers.
